One thing I hate about being a single working mom is missing moments with my son. I work all kinds of hours and often I am never home for dinner. However, whenever I have the chance I sit down with my son and have a meal with him. We get to have a conversation and discuss things going on in our life. Now that summer is here, I really don’t like the idea of standing over a hot stove to cook a dinner. I want something that will be quick and allow me more time with my son. Jaiden and I decided on Pulled Pork Sliders with Provolone and Sautéed Onions for dinner one evening and I have to say, they were delicious!

One of my goals as a parent is to not only show my son the importance of eating dinner together but to show him how to cook. Jaiden is only 9 but I feel like it’s never too early to learn. One day he is gonna head off on his own and I don’t want him living off of microwaved food. These Pulled Pork Sliders are so easy to make and take almost no time. Showing Jaiden how to make quick meals helps with my parent worries. I mean, I don’t think any of us want our children living off of junk right?
I’m not a fan of the summer heat but I also love a delicious meal that has real flavor real fast! I can say these Pulled Pork Sliders were full of flavor and were a hit with my little guy. He had 3 of the Pulled Pork Sliders plus a Pulled Pork Caesar Salad. Talk about a happy kid. Happy kid with a happy belly equals a happy momma. So, no complaining here!
When I first had Jaiden, I bought a lot of Smithfield products. It was just the two of us so one pork loin filet could easily be two or three meals for us. As a single mom on a budget, this was important to me. I was able to feed Jaiden and not break the bank. Smithfield Roasted Garlic & Herb Pork Loin Filet is one of those products that have Real Flavor Real Fast. You see, it took me less than 30 minutes to get our dinner together. The only part that was longer was the actual cooking. However, this is what I love about a crock pot. All I had to do was put my pork loin filet in the crock pot with some water and I walked away.
I was able to hop in the shower and fold some laundry while my home filled with the amazing smell of the Smithfield Roasted Garlic & Herb Pork Lion Filet. I mean, it smelled amazing! Once, the pork loin was done, our dinner was done in less than 30 minutes.
Once your pork loin is done cooking, you want to start sautéing your onions. As your onions are on the stove top, take this moment to shred your pork. I didn’t shred our pork loin too much. I like to still have a few bigger pieces throughout my sliders. Make sure you check your onions as you shred your pork, we don’t want burnt onions. As the onions continue to cook, prepare your sliders by getting them ready to place them in the oven.
Once your onions are finished, layer them on top of your shredded pork. Layer these bad boys with your provolone, or cheese of choice. Now when you put the top buns on, get some melted butter and rub that all over the top buns. This gives them such a nice crispy buttery flavor top and it is just perfect with these Pulled Pork Sliders.
- 1 Smithfield Roasted Garlic & Herb Pork Loin Filet
- 1 Pack Slider Rolls
- 1 Pack Provolone (Or your choice in cheese)
- 1/2 Onions (Optional)
- 3 Tps Butter
- 2 Cups Water
- 1 Caesar Salad Mix
- Pour 2 cups Water into Crock Pot
- Place your Smithfield Roasted Garlic & Herb Pork Loin Filet Into your Crock Pot (cut in half if needed)
- Cook for 1 hour on High (you can adjust time and temperature to your needs)
- When Pork Loin Filet is finish, turn your crock pot off
- Prepare and start to Sauté your onions with 1 tps butter
- While cooking onions begin shredding your pork
- Take the bottom halves of your sliders and place them in a non-stick dish or a buttered dish
- Begin to layer the bottom halves with your pork
- Spread your Sautéed onions all over your sliders.
- Begin to layer Provolone (or choice of cheese)
- Place Top halves of sliders back on top
- Melt 2 tps butter
- Using a brush, brush the butter over the top of the buns.
- Place in oven for 10 minutes on 350
- Place your Caesar Salad Mix into a bowl
- Top with some Pulled Pork
