As a single mom, I want to ensure that my son eats healthy. Always being on the go with him in school and me working, it was hard. I had to make him sit there and eat his veggies and I hated it. This Spinach and Chicken Pesto Salad is something my sister in law made a few years ago and I fell in love. I changed up a few things to make it more my own and to my liking and I couldn’t be happier. I was a bit sad I couldn’t eat it right away as I had to let the pasta cool off first. Well, I could have but it’s so good when it’s nice a cold. The fresh strawberry slices were the perfect touch to add a blast of flavor!
